It’s that time of year again.
Time to remember all those who died, while defending USA and to celebrate those who are still fighting for our freedom. We should thank those in uniform that we come in contact with on a daily basis. For those of you that have family currently serving, or have lost loved ones, Memorial Day has a very special meaning to you and yours.
Memorial Day is also the time for friends and family gatherings as it marks the end of a long school year, the unofficial beginning of summer and time for warm weather. Most people are hopefully planning a get together to feast on grilled food, sweet treats, ice cold beer and smooth wine. Personally, at gatherings, I love to prepare a big glass dispenser of Sangria or Rum Punch. It’s so easy to make, serve and have a backup on stand by. Every now and then, I like to shake things up a bit and try something new.
This year I decided to make something tropical and refreshing. I found this great idea on Pinterest for a Pineapple Punch, but wanted to switch it up and make it my own. Here is what I came up with:
Tropical Pineapple Punch
- 2 cups cubed pineapple, frozen
- 1 liter pineapple juice
- 1 bottle champagne or white wine (sweet or dry-depending on your sweetness level)
- 1 cup coconut rum
- 1 cup sliced strawberries, frozen (optional for color)
Mix pineapple juice, wine, and rum together. Chill until you are ready to serve. Pour into a glass jug or dispenser. Add in frozen pineapple and strawberries. Serve immediately.
Now, I love the refreshing look of any pink cocktail. They just look so quenching. I came up with this next recipe on a whim when I was short on liquor.
Pink Lemonade Fizz
- 1 Liter Sprite/Lemon lime drink
- 2 cans frozen lemonade
- 1 bottle white or blush wine
- 1 cup vodka (for a kick)
- 1/2 cup grenadine
- Lemon slices and raspberries for garnish
Stir everything together and serve immediately. If serving later, mix in the frozen lemonade right before serving.
And, as always, there’s the ever popular Sangria. Always a crowd pleasure and sure as heck easy to make. Although, you don’t have to follow this recipe exactly. Make it your own! Try different fruits and juices and see what your mixologist wit can come up with
- 2 bottles red (table) wine
- 1 cup Triple Sec or Orange liquor
- 1 can frozen lemonade
- 1 2-liter Sprite
- 1 cup apple juice
- Orange, apples and strawberries for garnish
Cut up your fruit into bite sized cubes and set aside. Mix everything together and pour into a large glass dispenser. Add in the cut up fruit. When you are ready to serve, add the frozen lemonade.
With all of the punch recipes, I recommend chilling until you are ready to serve. I also recommend making 1 or 2 backups, depending on the size of your party so you don’t have to worry about it later. Remember, this will go really fast, especially on a very hot day!
Serve all with ice on the side (never put in the dispensers as this will water it down). You can also serve extra garnish on the side so people can add for themselves.
